- Cool the pancit to room temperature. Please refrain from placing warm pancit in the freezer as it can induce condensation. The moisture content can drip into the pancit and cause it to become mushy when defrosted.
- Scoop the pancit into a freezer-safe resealable ziplock bag. You can freeze the entire batch together. However, we advise apportioning the pancit into smaller portions and using appropriately-sized airtight containers or ziplock bags.
- Please leave a gap at the top, allowing the pancit to expand during the freezing process. Otherwise, the freezer bag could burst and cause a mess inside the freezer.
- Place the ziplock bags into a large airtight container or transfer them to a big freezer bag. Squeeze excess air from the bags before sealing them.
- Use a marker pen to note down the contents and the freezing date on the bag to identify them when defrosting. Please note that almost all frozen food looks alike. Place the freezer bag deep inside the freezer allowing the pancit to freeze properly.
Alternatively, you can freeze the fresh noodles by placing them on a baking sheet for 15 minutes to allow them to dry out normally. Then, freeze the dry noodles in airtight ziplock bags or containers to remain fresh for one month. So, if you wish to have the pasta, you can remove them from the freezer and drop them into salted water when boiling.
