Course: A Beginner’s Guide to Bread Making
This is an introductory course on making your own bread – for those that have never made their own loaves or rolls before and want to try. I shall start with the very basic techniques of mixing, kneading, fermenting, rolling, proving, moulding, slitting, baking, storing, eating and using leftovers. Plenty of my Italian baking hints and tips are included.
This is a part demonstration, part hands-on course which will show you how to make your own slow fermentation focaccia, milk rolls, breakfast loaves and grissini. I will also show you some simple, easy and frugal recipes for using left over bread – from panzanella, to pappa al pomodoro, pan grattato, herby fried chicken and jam and bread pudding.
This course will give you the confidence to start baking your very own bread at home, everyday.

Directions to Bincknoll House from the M4 Motorway
From Junction 16 of the M4 motorway, take the A3102, signposted towards Royal Wootton Bassett and Calne.
Directly opposite the Sally Pussey Inn pub turn left into an unmarked, narrow rural lane, and proceed for ¼ of a mile.
At the next junction (Vowley Cottage) turn left, into the no-through Bincknoll Lane, and carry straight on for two miles. It’s a narrow lane – go slowly!
You will go over a little bridge and pass several farms (Little and Great Chaddington farms, Vowley Farm) and a riding school. You will eventually reach the hamlet of Bincknoll, with only five houses. Bincknoll House is the very last house, where you can go no further and the lane ends, on the left hand side, behind a red brick wall. Turn left into the gravel driveway, through the open gates.
Directions from Marlborough
From Marlborough, go up Kingsbury Street, and turn left at the signpost for Rockley and Broad Hinton, which takes you past the Marlborough Golf Course and into the Marlborough Downs, past the Barbury Castle Estate on your right.
At the bottom of Hackpen Hill you will come to a junction. Turn right then immediately left, straight through both Broad Hinton and Broad Town, and onwards straight onto Royal Wootton Bassett.
Arriving at the outskirts of Royal Wootton Bassett (you are now travelling on Station Road) turn right into Nore Marsh Road.
At the roundabout take the second exit into Bincknoll Lane, and at the next roundabout go straight over, second exit once again, towards the hamlet of Bincknoll. It’s a narrow lane – go slowly!
Carry straight on down this long, rural no-through lane for 2 miles, following the directions “Directions from the M4 Motorway”, point 4 above.
Directions from Calne
From Calne, take the A3102 road towards Royal Wootton Bassett. As you enter the outskirts of Royal Wootton Bassett, after crossing a bridge, turn right into New Road, and then at the T-junction, turn left into Station Road.
Drive straight on and then turn right into Nore Marsh Road. At the next roundabout take the second exit into Bincknoll Lane. At the following roundabout take the second exit again, straight on towards the hamlet of Bincknoll.
Carry straight on down this long, rural no-through lane for about 2 miles, following the directions “Directions from the M4 Motorway”, point 4 above. It’s a narrow lane – go slowly!
