Recipe for Italian Stuffed Tomatoes
The ultimate Italian Mamma retro recipe.
Ingredients to serve 6 people, as a starter
6 ripe tomatoes
1 x 200g tin of tuna {I use John West Tuna}
4 boiled eggs, peeled and finely cut
4 small boiled potatoes, finely cut
6 tbsps. homemade mayonnaise
1 tsp. paprika
1tsp. grainy mustard
a squeeze of lemon juice
Sea salt and black pepper to taste
2 tbsps. finely chopped fresh parsley
Method
Cut just a tiny slice off the bottom of the tomatoes, so they stand upright and straight. Then cut the tops off and scoop out the insides. Leave the tomatoes to drain upside down on a tray.
Mix all the other ingredients in a bowl.
Stuff the tomatoes with the filling. Serve.
